Bacon Cheddar Twice Baked Potatoes

Who doesn’t love baked potatoes? They are a wonderful comfort food. This is an amazing recipe with bacon and cheddar cheese, parmesan cheese, sour cream and chives. You will love this recipe and make it all the time.
Ingredients -
4 Large Idaho Baking Potatoes (scrubbed clean)
2 Teaspoons Olive Oil
2 Teaspoons Kosher Salt
6 Slices Bacon (cooked, drained, and crumbled)
1-1/2 Cups Cheddar Cheese (divided use, shredded)
1/2 Cup Sour Cream
1/4 Cup Chives or Green Onions (chopped)
Kosher Salt (to taste)
Freshly Ground Pepper (to taste)
1/4 Cup Parmesan Cheese (grated)
Sweet Hungarian Paprika
 
Preparation:

1. Preheat oven to 400 F.

2. Rub potatoes with olive oil and sprinkle with kosher salt.

3. Prick in several spots with a fork.

4. Place on a shallow baking pan 6 inches apart and bake until center is soft which is approximately 45 minutes to 1 hour.

5. When potatoes are cool enough to handle, slice each one in half lengthwise.

6. Carefully scoop out the soft flesh, leaving 1/4-inch rim around the potato skin, and place flesh in a mixing bowl.

7. Set skins aside to stuff later.

8. Mash the potatoes with a fork or masher (do not use a mixer).

9. A few small lumps are good for flavor and texture, so do not try to get them perfectly smooth.

10. Stir in bacon bits, 1 cup shredded Cheddar cheese, sour cream, chives, salt, and pepper.

11. Spoon or pipe mashed potato mixture into the potato skins and return to the baking tray.

12. Sprinkle with reserved 1/2 cup Cheddar cheese, Parmesan cheese, and paprika.

13. Return to the 400-degree F. oven and bake about 30 minutes until potatoes are lightly browned and heated through.

Pierce Potatoes
Pierce each potato deeply with a fork at least four times on each side. Doing this will allow steam to escape or the potato may explode during baking in your oven.

Frying Bacon
When you fry bacon make sure you keep an eye on it. Also you want to turn it often. Bacon has a tendency to burn very quickly. If the bacon is older it will try faster than fresh bacon.
