Bacon Wrapped Barbeque Shrimp

 
Ingredients -
16 Large Shrimp (peeled and deveined)
16 Slices Bacon
 
Preparation:

1. Preheat oven to 450 degrees F (230 degrees C).

2. Wrap shrimp with a slice of bacon, securing with a toothpick.

3. Be sure that you use the large shrimp--the cooking time for the shrimp and the bacon is similar.

4. If you use medium-sized shrimp you might want to precook the bacon a little.

5. Over cooked shrimp are tough and rubbery and a real shame.

6. Line a jelly roll pan with extra heavy duty foil.

7. Place the baking rack in the pan.

8. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning.

9. Turn and sprinkle the second side.

10. Let the shrimp sit for 15 minutes.

11. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.

12. Cook the bacon for 10 to 15 minutes.

13. The rack keeps the shrimp from sitting in the draining bacon fat.

14. With a little luck, you won't tear the foil.

15. You can throw that away and only have to scrub the rack.

 



Cooking Tip
Crispy Bacon
For crispy bacon you need to select thin slices to fry. Try using medium low heat and it will cook slower. Make sure you cook it slowly and watch it closely . When you think it’s done to drain the excess oil put a paper towel on a plate and day it on the bacon. The paper towel soaks up all the excess oil.

Cooking Tip
Onion
If you don’t have leeks you can use onion. It will be a little stronger so just reduce the amount that you use.
