Bacon Water Chestnut Rolls

This is a quick and easy recipe that is just delicious. The recipe is for bacon chestnut rolls that are covered in a mayonnaise and hot pepper sauce.

Ingredients -

1 can water chestnuts, (8 ounce), halved
1/2 Pound Bacon, cut in half
1/4 Cup Mayonnaise
1/2 Cup Light Brown Sugar
1/4 Cup Tomato-Based Chili Sauce

 
Preparation:

1. Preheat the oven to 350 degrees.

2. Wrap each water chestnut with a piece of bacon.

3. Place the rolls seam-side down in a baking dish.

4. Bake in the preheated oven for 30 minutes or until bacon is crisp and cooked through.

5. Drain off the grease.

6. Stir together the mayonnaise, brown sugar and chili sauce in a small bowl.

7. Pour the mixture over the bacon-chestnut rolls.

8. Return to the oven and bake for another 30 minutes.

Water Chestnut Storage

You want to store your canned, store bought water chestnuts in a cool and dry place. One purchased, write a date on the can and make sure that you use it within a year. Once opened, the water chestnuts need to be used within three days.

In order for your brown sugar to not become a solid rock, go to your local kitchen store and ask them for a brown sugar terra cotta disk. They are inexpensive and a great way to preserve the life of your brown sugar.
