Creamed Spinach with Onions and Bacon

This is a delicious recipe with creamed spinach, crispy bacon and sautéed onions. It takes constant stirring so that it doesn’t burn but it is worth every effort you put into it. You and your guests will love it.

Ingredients -

4 Slices Bacon
4 Tablespoons Butter, divided
1 Medium White Onion, chopped
2 Packages Frozen Spinach, (10 ounce), chopped, thawed and squeezed dry
2 Tablespoons All-Purpose Flour
1/2 Teaspoon Garlic Powder
1 Teaspoon Salt
1/2 Teaspoon Fresh Ground Black Pepper
1 Cup Whole Milk

 
Preparation:

1. Wrap the slices of bacon in a paper towel and set on a plate.

2. Cook the bacon in the microwave oven until crisp which takes about 1 minute per slice.

3. In a large skillet over medium heat, melt 1 tablespoon of butter.

4. Add the chopped onion.

5. Cook and stir until the onion is transparent.

6. Add the spinach and cook, stirring frequently, until most of the liquid has evaporated.

7. Melt the remaining butter in a separate skillet over medium heat.

8. Sprinkle the flour over the butter and whisk together using a fork until smooth.

9. Season with the garlic powder, salt and pepper.

10. Cook and stir until the mixture is thick.

11. Gradually stir in the milk so that no lumps form.

12. Simmer until it is thickened.

13. Add the spinach mixture to the cream sauce, and mix until coated.

14. Crumble bacon over the top and serve.

If you want an even richer dish, replace the whole milk with the same amount of half and half or heavy cream.

Spinach Storage

Fresh spinach should be dried and packed loosely in a cellophane or plastic bag and stored in the refrigerator crisper. If stored properly, it should last 3 or 4 days.
