Marinated Scallops Wrapped in Bacon

This dish contains two of my very favorite ingredients, bacon and scallops. It’s delicious and elegant looking so it is perfect for holidays or when special company is coming over.

Ingredients -

3/4 Cup Maple Syrup
1/4 Cup Soy Sauce
1 Tablespoon Dijon Mustard
12 Large Sea Scallops, halved
12 Slices Smoked Bacon, halved
24 Toothpicks
2 Tablespoons Brown Sugar

 
Preparation:

1. Stir together the maple syrup, soy sauce and Dijon mustard in a small bowl until smooth.

2. Add the scallops, and toss to coat.

3. Cover the bowl with plastic wrap, and marinate for 2 hours.

4. Preheat the oven to 375 degrees F.

5. Line a baking sheet with a sheet of aluminum foil.

6. Arrange the bacon pieces on the baking sheet so they do not overlap.

7. Bake them in the preheated oven for approximately 8 minutes or until the is still very soft and pliable.

8. Remove the bacon from the baking sheet and pat dry with paper towels to remove the excess grease.

9. Drain or wipe the grease from the baking sheet.

10. Wrap each scallop with a piece of bacon and secure with a toothpick.

11. Place the scallops onto the baking sheet.

12. Sprinkle the scallops with brown sugar.

13. Bake in the preheated oven until the scallops are opaque and the bacon is crisp which takes 10 to 15 minutes, turning once.

Recipe Tip

Make sure that you soak the toothpicks for 15 minutes (or longer) before you secure the bacon around the scallops. This way the toothpicks won’t burn and ruin the dish.

You can scale this recipe up and down depending on whether you want to serve this as an appetizer or as the main course.
