Spicy Pimento Cheese Sandwiches with Avocado and Bacon

This is the perfect spicy little sandwich with pimento cheese, avocado and bacon. It’s a great recipe to try when you are tired of eating the same old deli meat sandwiches for lunch.

Ingredients -

4 Slices Bacon
1 Package Cream Cheese, (3 ounce) , at room temperature
1 Cup Cheddar Cheese, shredded
1 Cup Monterey Jack Cheese, shredded
1/2 Cup Mayonnaise
1/4 Teaspoon Sea Salt
Fresh Ground Black Pepper, to taste
1/8 Teaspoon Garlic Powder
3 Tablespoons Pimentos, chopped
1 Teaspoon Onion, grated
1 Jalapeno Pepper, seeded and chopped
1/4 Teaspoon Cayenne Pepper
4 Slices Bread, (your choice)
1 Avocado, peeled, pitted and sliced

 
Preparation:

1. In a skillet over medium heat, cook the bacon until crisp.

2. Remove the bacon and drain on paper towels.

3. Place the cream cheese in a bowl, and beat until light and fluffy.

4. Mix in the Cheddar cheese, Monterey Jack cheese, mayonnaise, salt, pepper, garlic powder, pimentos, onion, jalapeno, and cayenne pepper until well

5. blended.

6. Spread two bread slices with the cheese mixture.

7. Top each slice with avocado and bacon, divided evenly.

8. Top with two remaining bread slices to make a sandwich.

9. Serve immediately.

If you want to cut down on the fat and calories, try substituting the regular mayonnaise with low-fat mayonnaise and the shredded Monterey Jack with low-fat shredded cheese of your choice.

This recipe is wonderful on any type of bread that you like. I like to use Pita bread for an even more low fat lunch.
